History

Chef Dong’s interest in food craft was piqued during his childhood in Korea. Later, this interest grew into a passion that fueled his choice to train with several master chiefs throughout the country. Learning their skills and specialties equipped him to pursue earning his Korean sushi license, which he was awarded in 1985.

Looking for new challenges, and well-armed with the flavors and recipes he’d accumulated since his youth, Dong moved to New York City in the early 90’s to open his own restaurant, putting his highly developed palate and extensive training to use. After achieving success in an urban arena, a decision to be closer to family propelled Dong and wife Lee to relocate to Michigan, where Sushi Samurai was born.

Today, Sushi Samurai’s quality consistency and innovation have garnered a loyal crowd of regulars who eagerly await news of seasonally available specialty items, which has led to the creation of a dining club that notifies members when delicacies and new menu selections are being offered. 2012 marked the restaurant’s 10th anniversary and celebrating this milestone in Sushi Samurai’s new, larger space, opened in 2011, made the celebration that much sweeter.

Chef Dong’s 25 years of experience are not only apparent in his food creations but also in his attention to detail with everything from ingredient freshness to his immaculately clean kitchen and restaurant.  Chef Dong and his tight knit staff run a restaurant they are proud to share with you; come eat with us!
